  • 3 cups of bread flour
  • 2 1/4 teaspoons of active dry yeast
  • 3/4 cup of onion (chopped)
  • 3/4 cup of mashed potatoes
  • 1 1/2 tablespoons of cilantro or 1 1/2 tablespoons of parsley (chopped)
  • 3 tablespoons of parmesan cheese (grated)
  • 1 1/2 teaspoons of ground cumin
  • 1 1/2 teaspoons of dried oregano
  • 1/2 cup of water
  • 1 1/2 teaspoons of salt
  • 1/3 cup of tomatoes (chopped and drained)

Once you've gathered all the ingredients, follow these simple instructions:

  1. Depending on what your bread machine manual states, place all the ingredients except for the tomatoes in that specified order that the manual states
  2. As directed on the manual, process on the bread cycle
  3. When the cycle is finished, you'll then add the tomatoes

3. Gaucho Beans

This Gaucho bean recipe is very homey and hearty. The beans are saucy and extremely scrumptious! For this recipe, you'll need the following ingredients:

  • 2 lbs of dried red kidney beans (rinsed), or two 15 ounce cans of red kidney beans (rinsed and drained)
  • 4 bacon strips (raw and chopped)
  • 1 teaspoon of baking soda (divided-only needed if using the dry beans)
  • 1 tablespoon of vegetable oil
  • 8 scallions (white and light green sections only- finely chopped)
  • 1 large yellow onion (finely chopped)
  • 4 medium tomatoes (peeled, cored, and chopped)
  • 3 large carrots (grated)
  • 1 bay leaf
  • 1 garlic clove (finely minced)
  • 1/2 teaspoon of Worcestershire sauce
  • 1/2 teaspoon of salt
  • 1/ teaspoon of ground cumin

Take all of the listed ingredients and follow the steps listed below:

  1. Dry beans use only- soak in 1/2 teaspoon of the baking soda and cold water overnight.
  2. The next day, drain them and place in a large pot
  3. Add bacon, the other half of the baking soda, and 6 cups of water
  4. Bring mixture to a boil, then reduce heat to a simmer (cook beans until they are soft-about 2 hours)
  5. You may need to add another cup of water if the water becomes too low before the beans are done
  6. Canned beans use only- warm in a large pot with 3 and 1/2 cups of water, then drain
  7. In a large skillet over medium-high, heat oil for 1 minute
  8. Add remaining ingredients
  9. Cook, stirring often until the vegetables are soft (about 5-7 minutes)
  10. Add the vegetables to the pot with the beans (cook long enough so that the flavors begin to blend- about 10 minutes)
  11. Remove bay leaf and serve

This creates a great dish for cuddling with on the couch on a cold day.

4. Colombian Avacado Salsa

A list of awesome Colombian food dishes would be incomplete without a recipe for avocado salsa! For this mouthwatering recipe, you'll need the following ingredients:

  • 1 1/2 teaspoons of habaneros (fresh and finely chopped)
  • 1/3 a cup of chile, Aja dulce (fresh, seeded, and chopped)
  • 2 large hard-boiled eggs (coarsely chopped)
  • 6 tablespoons of white vinegar (distilled)
  • 1 1/2 cups of avocados (firm, ripe, and coarsely chopped)
  • 1 cup of sweet white onion (chopped)
  • 1 cup of ripe tomatoes (chopped)
  • 3/4 cup of fresh cilantro (chopped)

Bring all of these wonderful ingredients together and complete the following instructions:

  1. Purée the chiles with the vinegar and 1 teaspoon of salt in a blender
  2. Transfer the mixture to a bowl and stir in the remaining ingredients
  3. Keep chilled until ready to use
